Khagina ( Spiced up Indian Scrambled Egg)

This mouth-watering quick to make breakfast recipe this happens to be a favorite recipe reserved for those lazy Sunday mornings goes well with poori or jeera rice

Ingredients for Khagina

Eggs – 4 beaten ( serves a family of 2)
Oil – 1 tablespoon
Onions – 1 large finely chopped
Crushed peppercorn /White pepper powder – 1 /2 to 3/4 teaspoon
Salt – to taste
Coriander – fresh, 1/2 cup a cup finely chopped
Green Chilli peppers- 1-2 finely chopped

Method to cook Khagina

Take oil in a medium pan and heat it on medium flame

Sauté the onions till they turn translucent, now add in the chopped chilies and fry for a minute

Next, we would pour in the mixture of beaten eggs and fold it in with the sautéed onions

Add the salt and crushed peppercorn powder and mix well
Scramble the egg mixture and garnish it with freshly chopped coriander before taking it off the flame

Enjoy the Khagina with hot rotis or poori

Khagina can also be used as stuffing.
