Recipe for Galawati Kebab
What is unique about Galawati Kebab ?
The name Galawati Kebab literally translates to ‘melt in the mouth ‘ kebabs.
According to ancient Indian fork-lore, these kebabs were an invention made by the King’s khansaamas to overcome the difficulty of their King chewing upon meat !!
Made with a host of aromatic whole spices with an added touch of smoky flavour , these kebabs are sure to whet the appetite of any guest !!
Ingredients for Galawati Kebab
Minced mutton – 500 gms
Raw papaya – 50 gms or around 6 teaspoons of mashed papaya
Gram flour – 6 teaspoons
Chilli powder – 1 tablespoon
Ginger garlic paste- 2 teaspoons
Ghee (clarified butter ) 1 tablespoon
Salt to taste
Oil- for frying
Onion – 1 medium, sliced into cylindrical rings for garnishing
Ingredients For Galawati Masala :
Whole peppercorns – 10-12
Cinnamon powder – 1/2 a teaspoon
Cardamom powder – 1/2 a teaspoon
Cloves – 2-3
Nutmeg powder – 1/2 a teaspoon
All spice powder( Garam masala) powder – 1 teaspoon
Potli masala – 5 teaspoons
Method to make Galawati Kebab
Mix the mashed papaya with the mutton mince
In a pan dry roast the gram flour on low flame
Add this roasted gram flour to the mutton mince along with salt , ginger garlic paste, chilli powder and the ingredients for the galawat masala paste mentioned above
Make a small well in the centre of the galawat mixture and place the cloves , a dollop of clarified butter along with a burning piece of coal in the centre and cover the vessel immediately with a tight lid
Leaving the vessel covered for 10-12 minutes helps impart a smoky flavour to the mince
Take the smoked mince and pinch out small portions shaping them slightly flattened cylindrical shaped kebabs
In a saucepan , heat around 4 tablespoons of oil and pan fry the kebabs
on both sides til they turn a crisp golden
Serve these mouth watering Galawat kebabs with onion rings drizzled with fresh lemon juice
