Recipe for Kakori Kebab

What is unique about Kakori Kebab?

Descending from the houses of the Nawabs, Kakori Kebabs are delicious Mughlai appetisers prepared using minced lamb mutton with onions and a host of fragrant Indian spices !

These kebabs are soft and succulent in their in their texture and flavour and tend to melt in your mouth right away . A perfect rich starter for any buffet or dinner party night !!

Ingredients for Kakori Kebab

Minced Lamb Meat – 500 gms
Raw papaya- 1/2 a cup ,mashed
Gram flour – 40 gms
Ginger garlic paste- 2 teaspoons
Salt to taste
Chillies powder- 2 tablespoons
Cloves – 2 pods

Ingredients for the Kakori Masala

Onions – 1 medium , finely diced
Oil – for frying
Black Pepper powder – 1/2 teaspoon
Kashmiri Red chilli powder – 2 teaspoons
Cloves – 2-3 pods
Green cardamom – 5 -6 pods
Big cardamom – 2 pods
Poppy seeds – 6 tablespoons
Cashews – 12-15
Nutmeg – 1
Rose petals – 5-6

Method to make Kakori Kebab

In a pan take about 4 tablespoons of oil and fry the onions till they turn a light golden brown

Lower the flame and temper the oil by adding the above mentioned whole spices to the fried onions

Grind the above ingredients to a fine paste in a mixer
Wash the minced meat and mix it with the mashed papaya

In a pan , dry roast the gram flour on low flame till it starts to change colour .Add the salt , ginger garlic paste and red chilli powder to the flour and mix well

Add the above prepared mixture to the minced meat

Also mix in the fried onion and whole spice ground paste into the minced meat

Now transfer the prepared mince mixture into a vessel with a lid and make a small well in the centre of the mixture

Place a piece of burning coal in the centre of the well drizzling a few drops of oil onto the coal along with 4-5 cardamoms and then cover the lid

Allow the coal to smoke the minced meat mixture for 10-15 minutes

After the stipulated time, uncover the lid and divide the prepared mixture into equal portions ,

Wrap them around the kebab skewers and either cook them on burning hot coal till they turn a golden brown or alternatively grill them in the oven by brushing them with oil at 240 degree for 15-20 minutes

When cooked , take them off the skewers and serve these hot , mouth watering Kakori Kebabs with onion rings, a drizzle of lemon juice and mint chutney !!
