Recipe for Tomato Ka Cut
What is unique about Tomato Ka Cut?
A typical Hyderabadi cuisine, Tomato Ka Cut is a tangy and flavoursome dish and a favourite starter side dish that goes well with Indian Rootis and naan !! A perfect addition to those cold autumn supper meals !!
Eggs are optional and if yuo are a vegetarian you can exclude eggs from this recipe. We can always add fresh mint and corinder leaves for garnishing this recipe.
Ingredients for Tomato Ka Cut
Tomatoes – 8-10 boiled with their skins peeled off and puréed in a blender
Boiled eggs – 3
Oil – 4 tablespoons
Dried Red Chillies – 2-3
Cumin – 1 teaspoon
Turmeric- 1 teaspoon
Salt to taste
Chilli powder- 1 tablespoon
Roasted Chana Dal (Putana daal)- 4 tablespoons, blended to a fine powder
Curry leaves – 6-7
Method to cook Tomato Ka Cut
With the help of a strainer, sieve the puréed tomatoes and keep aside
Peel the boiled eggs and slice them through the centre into equal halves Repeat this with all the remaining eggs
In a medium pan or vessel heat the oil and add cumin seeds and curry leaves and dried red chillies
As the seeds start to crackle add the sieved tomato purée and stir it in well
Add the turmeric, salt and chilli powder and give the ingredients a good mix
Add one cup of water and leave the gravy to simmer on low flame for 15-20 minutes giving it a stir occasionally
As the gravy starts to bubble, add in the blended putana dal mixed in half a cup of water. Stir the contents well.
Leave it to cook on low flame for another 5 minutes ensuring the gravy has attained a semi-thick consistency
At the end of this period switch off the flame and dish out the tomato ka cut arranging the halved boiled eggs on top of the gravy
Garnish the gravy with freshly chopped basil and coriander
Relish the Tomato ka Cut with Indian rotis (flatbread) or naan bread.
