Recipe for Bheja Fry
What is unique about Bheja Fry
Bheja refers to Brain in India, and here we have taken Lamb brain into the recipe.
Lamb brain cooked in onions, black pepper, and vinegar. A perfect Nawabi style breakfast meal to be enjoyed with fried Poori or Flavoured rice.
This is a very unique home recipes, and enjoyed by Nawabs for a very long time.
Ingredients for Bheja Fry
Lamb brain – 3-4, cleaned and deveined
Onions – 7 medium, finely sliced
Oil – 1/2 a cup
Turmeric – 1/2 teaspoon
Salt to taste
Black pepper -1 1/2 – 2 teaspoons
Vinegar – 1 1/2-2 teaspoons
Garam Masala Powder – 1/2 teaspoon
Ginger-Garlic Paste – 1 tablespoon
Method to cook Bheja Fry
In a medium-sized Kadai or pan, heat the oil and sauté the onions till they turn translucent add ginger-garlic paste
Cook for 2 minutes
At this point lower the flame and add the lamb brain or Bheja’s
Stir fry and cook Bheja till it starts changing color and the onions start to brown (around 10-15 minutes)
It’s now time to add in the turmeric, salt, and black pepper and gently give the ingredients a god mix (a perforated flat ladle would work best for this )
After cooking for another 5 minutes add the vinegar
Add garam masala and let it cook on low flame
Keep mixing gently on low flame till the curry turns dry and the oil starts to appear on the surface
Switch of the flame relish the Bheja fry curry with hot puris or Flavoured rice
