Method to cook Mutton and Lamb Mince Delight

In a deep pan or Kadai, temper the oil with green chillies and shahi jeera and sauté the onions till they turn a light golden brown

Next add in the turmeric, salt, ginger garlic paste and fry lightly on low flame by giving the ingredients a good mix

Add in the lamb pieces and minced lamb together and leave them to cook for 20-25 minutes on low flame

As the meat begins to cook, it would start letting off the water into the gravy

Whilst the meat cooks, keep mixing the ingredients occasionally to prevent the lamb mince from sticking

Now add in the rest of the ingredients including chilli powder, garam masala, cumin powder, coriander powder and dried fenugreek leaves and give the ingredients a good mix with the help of a ladle

Add 1/4th cup of water and leave the meat to cook on low flame for about 30-45 minutes by covering the pan with a lid

Alternatively, you could cook the gravy in a pressure cooker for 5-6 whistles

At the end of this duration, the gravy should have turned thick and the lamb must have cooked. If that’s not the case, then leave it to cook further on low flame till the oil starts to come upon the surface of the gravy

As the oil comes to the surface, switch off the flame and drizzle in some lemon juice (to taste) and freshly chopped corinder leaves
