What is unique about Laal Gosht?

Laal Gosht is an extremely appetising fiery red mutton gravy that is sure to tantalise your taste buds with its spicy flavours. A home innovation inspired by the Laal Mass a traditional Rajasthani cuisine; also referred to as Red Spicy Mutton Delight.

Team up this delectable recipe with hot Rotis or flavoured rice or even jeera rice!!

Ingredients for the Laal Gosht

Lamb Mutton pieces – 250 gms ( preferably boneless )
Onions – 2 medium, finely sliced
Oil – 4 tablespoons
Cloves -1-2 depending on the intended spice level
Cardamom – 1 -2 pods
Caraway seeds (Shahi jeera )- 1 teaspoon
Turmeric- 1/2 a teaspoon
Ginger-garlic paste- 2 teaspoons
Kashmiri Lal Mirch Powder – 2 tablespoons
Tomato concentrate – 4 tablespoons
Hot Chili Garlic Sauce – 1 tablespoon
Coriander- 8-10 twigs, finely chopped
Lemon juice – 2 teaspoons

Method to cook Laal Gosht

In a medium-sized heavy pan or pressure cooker,  temper the hot oil with the whole spices – cloves and cardamom and caraway seeds on low heat

Once the spices start to crackle add the chopped onions and sauté

As the onions begin to brown add the turmeric, salt, ginger garlic paste and tomato concentrate and stir fry 5 minutes till the purée is well cooked

Now add in the mutton and leave it on a medium flame for 5-10 minutes till the meat pieces start to change colour and begin to give off the water

At this point add in the chilli powder and hot chilli garlic sauce and once again give all the ingredients a good mix

Add 1/4th cup of water and leave the gravy to either pressure cook for 5-6 whistles or alternatively if cooking in a pan or vessel leave the mutton to tenderise on low flame for 35-40 minutes by covering the vessel with a tight lid

After the meat gets cooked uncover the lid and leave it on low flame to allow the excess water from the resulting gravy to evaporate till the point when a semi-thick consistency of the gravy is attained as the oil begins to separate

Switch off the flame and dish out this mouth-watering spicy Laal Gosht garnished with coriander and drizzle if lemon juice on the top
