Ingredients for Safed Chicken Ka Saalan

Boneless chicken – 250 gms, diced into medium-sized pieces
Vinegar – 1 tablespoon
Onions – 3-4, peeled and diced into quarters
Cashews – 10-15
Almonds – 5-8

Oil -4 tablespoons
Salt to taste
Ginger-garlic paste- 1 teaspoon
White pepper (grounded)  – 2 tablespoons

Yogurt – 2 tablespoons, beaten
Dry fenugreek- 1 tablespoon
Single cream – 1/2 a cup

Whole spices :
Cardamom – 2
Cloves – 2-3
Whole peppers – 4-6
Cinnamon – 1/2 “
Shahi jeera – 1 teaspoon
Bay leaf (Tej patta )- 1-2

Method to cook Safed Chicken Ka Saalan

Soak the washed chicken pieces in vinegar and water for a minimum of 15-20 minutes

In a large mixer jar, add the diced onions, cashews, and almonds and blend them into a fine paste to be used later

Take a medium-sized pot or pan and heat the oil. Once the oil gets heated, lower the flame and temper the heated oil with the whole spices

Now add the diced chicken soaked in water along with the turmeric, salt, ginger-garlic paste, and white pepper (grounded)

Once the chicken starts to cook, add in the blended onion paste to the chicken and mix the ingredients well

Allow the gravy to cook on low flame for 15-20 minutes. Continue to mix the gravy occasionally on low flame to get rid of the raw taste of the onions

Now add in the beaten yogurt, and cook further for another 8-10 minutes

Taste the gravy to adjust the flavors accordingly. At this point, you might want to add more white pepper or salt if required

Just before taking the gravy off the flame, add in the dry fenugreek, crushed between your palms, and a dollop of cream

Leave the gravy to simmer on low flame and then switch off the flame after 5 minutes

Feast on this rich, creamy, and delightfully delectable Safed Chicken Ka Saālan teamed with Indian flatbread (roti) or steamed/flavored rice
