Recipe for Pepper Chicken
What is unique about Pepper Chicken?
A simple yet delightfully tasteful chicken based gravy , Pepper Chicken occupies a unique place amongst the chicken recipes.
The aroma of freshly ground Black Pepper in the gravy cooked along with the succulent chicken pieces make it hard to resist !!
Ingredients for Pepper Chicken
Chicken leg pieces- 12Oil – as required
Onions – 2 medium , finely sliced
Tomatoes- 3 medium , finely chopped
While pepper corns – 5 teaspoons
Cloves – 2-3
Cardamom – 2-3
Cinnamon – 1” stick
Dry fenugreek leaves – 1/2 a teaspoon
Ginger garlic paste- 2 tablespoons
Coriander powder – 2 teaspoons
Chilli powder 2 teaspoons
Salt to taste
Coconut milk – 2-4 tablespoons
Coriander- 1/2 a bunch , finely chopped
Cashews – 12-15 for garnishing
Method to cook Pepper Chicken
Crush the pepper corns coarsely using a mortar and pestle
Take a mixing bowl and add 2 tablespoons of oil , salt and crushed peppercorns and mix them well
Rub this mixture onto the individual chicken leg pieces
Leave the chicken pieces aside to marinate for around 30 minutes
In a pan , heat around 6 tablespoons of oil and sauté the chicken pieces till they brown
In another pan heat 2 tablespoons of oil and add the cloves, cardamom and cinnamon. Next add the sliced onions and sauté till they turn light brown
Add the ginger garlic paste and mix well
Now add the coriander and red chilli powder and mix well
Mix in the chopped tomatoes and leave the gravy to cook on low flame until the oil starts to separate
Add fresh coconut milk , a pinch of pepper powder and fenugreek leaves mix well
Now add the fried chicken pieces into the gravy giving all the ingredients a good stir
Add 1 cup of water and cook for about 10-12 minutes until the gravy turns semi-dry
Sauté the cashews and use it to garnish the finished dish along with coriander
