Recipe for Marag Soup
What is unique about Marag Soup?
Marg soup is a rich, creamy, wholesome soup made of tender juicy lamb bone pieces cooked to perfection
A traditional Starter soup traditionally passed down through several generations by the Nizami khansāmās (cooks), Marg soup surly occupied its unique place in the Nizami kitchens !!
The key in preparing margh soup is to cook the meat in a way so as to allow the juices from the meat to be given off .

Ingredients for Marag Soup
Tender Mutton pieces with bone – 400 gms
Oil – 2 tablespoons
Peppercorns- 3-4
Cinnamon – 1/2 “ stick
Cardamom- 1-2
Pepper powder- 1/2 a tablespoon
Garam masala powder – 1/2 a teaspoon
Salt to taste
Green chillies – 4-6 blended to a fine paste
Cashews – 10-12 , soaked in water and blended to a fine paste
Coriander- 1/4 cup, finely chopped
Mint leaves- 1/4 cup, finely chopped
Method to cook Marag Soup
In a heavy bottomed vessel or pressure cooker, heat the oil and add in the whole spices
As the oil begins to get tempered with the spices , add the chopped onions and fry till they start turning translucent
Add in the salt and ginger garlic paste and saute on low flame for 2 minutes
Add in the lamb pieces and green chilli paste and cook till the meat starts to change colour and gives off water
Now add 4 cups of water , the chopped coriander and and pressure cook the soup gravy for 5-6 whistles or cook over low flame in a vessel covered with a lid for 30-45 minutes
This time allows the meat pieces to cook well letting off the juices . At the end of the cooking period or as the cooker cools down add the cashew paste , pepper powder and garam masala powder giving the soup a good mix
Taste the soup to check the level of salt and other spices and adjust accordingly
Leave the soup to simmer on low flame for the final 2-5 minutes until the oil starts to surface
Now switch off the flame and relish this wholesome authentic Marg soup served in individual bowls
