Recipe for Kabooli
What is unique about Kabooli?
Kabooli is unique rice Paulo made from chana dal and long-grained basmati rice and various spices. A lot of different vegetables of choice to make it more unique as per home taste.
Ingredients for Kabooli
Split chickpeas ( chana daal )- 1 cup
Long grained rice – 3 cups
Onions – 1 medium, finely sliced
Oil – 4 tablespoons
Shahi jeera – 1 teaspoon
Cinnamon- 1/2 “ stick
Cardamom – 1-2 pods
Cloves – 1-2
Green chillies – 2, slit through the centre
Coriander – 1/2 a cup, finely chopped
Turmeric- 1/2 a teaspoon
Salt to taste
Ginger garlic paste- 1/2 a teaspoon
Chilli powder – 1 teaspoon
Method to cook Kabooli
Wash and soak the rice together with the split chickpeas and place them aside for later use
In a medium-sized rice cooker, drizzle in the oil and temper it on low flame by adding the cloves, cinnamon, cardamom and jeera seeds
Next, sauté the sliced onions till they turn translucent
As the onions are done add in the remaining ingredients including green chillies, turmeric, ginger garlic paste, salt and chilli powder and coriander and give all the ingredients a good mix
Now drain off the excess water and mix in the soaked rice and split chickpeas
Saute the mixture on low flame for 3-5 minutes to allow the rice and daal to get lightly roasted along with the rest of the added ingredients
To cook this mixture add in a measured amount of 7 and a half cups of water ( for 5 cups of the rice and chickpeas mixture ) and leave it to cook in medium flame for 3-4 whistles
Once the cooker cools down to take off the lid and serve this mouth-watering kabooli rice with plain yoghurt or popadums
